Biriyani-From the Royal Plate to the World


The origin of Biriyani is actually unknown.Different historians have different versions.
In Short Biriyani is an upgraded version of "Pilaf" which came to India through Mughal's and Arab traders.

Biriyani,the word is derived from birinj,Persian word for Rice.It also means "to fry".

It is a dish made out of different meat/vegetables combined with aromatic spices with boiled rice over long period on slow fire.
With time this dish has evolved all over the world as per availablity of spices and use of flavours.In South India you get Kacchi Dum Biriyani.
Whereas in Kolkata Biriyani is accompanied with Potato and egg.In some places Raisins,Almonds and Cashews are also added.

Hyderabad.How can the Biriyani be missed as it can be happily called
the Biriyani Capital of South.


Hyderabadi Dum Biriyani,it is famously called Kacchi Biriyani.
The Meat is marinated for hours to soften the meat.The Rice is 1/4th cooked with whole spices for flavour.In a big Hundi the base and the whole pot is glazed with ghee and placed on wood fire.The base is layered with the Marinated meat,then three layers of boiling drained half cooked rice is added to it with different levels of ground spices.
The top layer of rice is sprinkled with meetha atar,kewra water,rose water and saffron dunked milk.The whole pot is sealed tightly and some burning coal or fire wood is added on top.
The whole pot is allowed to cook on dum for about an hour at a very low flame.

Finally the truth of the hour.After one hour the pot is opened and you are greeted with brusts of complex aroma.This Biriyani has to be served in such a manner that all three layers will be on your plate.The flavours come in layers.If you are very lucky and you get a layer of Biriyani where the three layers combine together you get a flavour which will be on your tastebuds forever.
The best time to experience the dum Biriyani at Hyderabad is either on FRIDAY evening or on WEEKENDS.

In a span of 6 days we managed to taste Biriyani's From big names in Hyderabad.To mention each has a history of its own and although each of then look very similar trust me one spoonful and you will understand how different are they from each other.We Recommend these places highly and you cannot miss them as they have innumerable branches at various areas of Hyderabad.

2.Shah GhouseIf you are going here please donot order anything other than their biriyani.The Rice tasted awesome but the mutton was on the stiffer side.

3.Hotel Shahdab:If are in the Charminar area looking and enjyoing the majestic pillar don't miss Shahdab.It had a very complex flavour and it came out in every spoonful.Sometimes the rice tasted of lemon,while another spoonful tasted more of cumin.Tcumin.Their flavour is seriously complex to explain.

4.Paradise:It is very famous here by name.Anyone who visits HYDERABAD will definitely refer to it.From Personal opinion their Biriyani is very light.Rlight.Rice aromatic,More saffroni yellow and loads of whole cumin.

5.The Grand Hotel:To be very frank their Biriyani was more on aromatic spices.It tasted more of Nutmeg and Cinnamon.It has a history
and it proves by the old decor and the timeless pictures hanging on the wall.

6.Pista House:Love the aroma of Biriyani you just can't miss their Zaffrani Mutton Dum Biriyani.The sweet smell lingered in our noses for more than an hour after we had the dish.

7.Bawarchi:They claim to be awarded the best Biriyani award for 2017-2019,but nothing special.The amount was not sufficient for two people and only two pieces of mutton where as all the other places gave 4 pieces with more than enough rice.
